Easy Summer Breakfasts to Fuel Your Day
Summer mornings are the perfect time to reset your routine and nourish your body with fresh,
simple ingredients. The key to a healthy start? Keep it light, energizing, and seasonal. These
three breakfast recipes are quick to prepare, packed with nutrients and made to help you feel
your best all day long.
Tropical Chia Pudding
A refreshing, make ahead breakfast that’s rich in fiber, healthy fats and full of flavor.
Ingredients:
1 cup unsweetened coconut milk
3 tbsp chia seeds
1 tsp honey or maple syrup
1/2 cup chopped pineapple
Fresh mint leaves
Directions:
In a jar or bowl, combine coconut milk, chia seeds, and sweetener. Stir well and refrigerate
overnight. In the morning, top with pineapple and mint.
Cucumber Avocado Toast with Lemon Zest
A cooling, savory breakfast that’s full of good fats and amazing flavor.
Ingredients:
1 slice whole grain or sourdough bread
1/2 ripe avocado
4-5 thin cucumber slices
Lemon zest
Sea salt & pepper
Directions:
Toast the bread. Smash avocado on top, then layer cucumber slices. Sprinkle with lemon zest,
salt, and pepper.
Green Glow Smoothie
Start your day with a burst of nutrients and refreshing summer ingredients.
Ingredients:
1 handful spinach
1 banana
1/2 cup pineapple
1/2 inch fresh ginger
Juice of 1/2 lime
3/4 cup water or coconut water
Directions:
Blend all ingredients until smooth. Pour into a glass and enjoy!
