Fall is the perfect season to enjoy warm, comforting flavors while supporting your wellness. Over the next four weeks, we’ll explore one seasonal recipe each week — starting with breakfast and ending with snacks or desserts. These recipes are simple and delicious and designed to help you embrace the flavors of autumn while keeping your meals balanced.

Roasted Butternut Squash & Quinoa Salad

A balanced lunch supports productivity and mood. Butternut squash is packed with vitamins and antioxidants, while quinoa adds protein and fiber, keeping you full and energized through the afternoon.

Recipe

● 1 small butternut squash, peeled & cubed
● 1 cup cooked quinoa
● 2 cups mixed greens
● 1/4 cup walnuts
● 2 tbsp olive oil, 1 tbsp apple cider vinegar, salt & pepper to taste

Instructions

  1. Toss squash with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 20–25 minutes.
  2. Mix roasted squash with quinoa, greens, and walnuts.
  3. Drizzle with remaining olive oil and apple cider vinegar.

Make this salad for lunch at least 2–3 times this week. Experiment with adding seasonal toppings like cranberries or pumpkin seeds for variety.
